Red Beans and Rice

5 cups white rice
24oz red beans
2lbs peppered thick slice bacon
16ozs chopped tomatoes
1 large yellow sweet onion
Tony Cachere’s Cajun Seasoning

Prepare rice with a 2-1 ratio of water. simmer till aldente. Chop onion into pieces and set half aside. Cut bacon into pieces and cook with half of the onions until crispy, drain on paper towel. Drain beans and add to rice with tomatoes and bacon. Add Cajun Seasoning to your taste. Add remaining onion and simmer till rice is tender all the way through. Don’t over cook.
