Walnut Bread

1 3/4 c. all-purpose flour
1 1/4 tsp. baking powder
1/2 tsp. ground cinnamon
1/2 tsp. kosher salt
2 large eggs
1 c. sour cream
3/4 c. granulated sugar
1/2 c. canola oil
1 tsp. pure vanilla extract
1 c. chopped walnuts

Heat oven to 350 degrees F. Coat an 8 1/2-inch by 4 1/2-inch loaf pan with cooking spray.
In a medium bowl, whisk together the flour, baking powder, cinnamon, and salt. In a large bowl, whisk together the eggs, sour cream, sugar, oil, and vanilla.
Gradually add the flour mixture into the egg mixture, stirring until just incorporated. Fold in the nuts.
Transfer the batter to the prepared pan and bake until golden brown and a wooden pick inserted into the center comes out clean, 55 to 65 minutes. Let cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
