Autumn Cheescake

1c Graham Cracker crumbs
3T Sugar
1/2tsp Cinnamon
1/4c Butter (melted)
2 8oz Cream Cheese
1/2c Sugar
2 Eggs
1/2tsp Vanilla
4c Apple slices (peeled)
1/3c Brown Sugar
1/2 tsp Cinnamon
1/4c Pecans (chopped)

Combine crumbs, sugar, cinnamon and butter. Press into bottom of 9′ spring form pan. (I sprinkle a bit of Brown Sugar over the crumbs, makes it caramelize a little)

Combine cream cheese and sugar in a mixing bowl, and mix till well blended. Add eggs one at a time mixing well between them. Blend in vanilla and pour over crust.

Toss apples with brown sugar and cinnamon, spread over cream cheese and top with pecans. Bake at 350′, for 1 hour and 10 minutes. Loosen cake from rim of pan and cool before removing rim.
