Kirsch Schwarzwälder Torte (Black Forest Cake)

1 2/3 cups all-purpose flour 2/3 cup cocoa powder 1 1/2 teaspoons baking soda 1 teaspoon salt 1/2 cup shortening 1 1/2 cups sugar 2 eggs 1 teaspoon vanilla 1 1/2 cups buttermilk Pit most of the cherries leaving about 10 for decoration on top 

Cream Cheese Frosting

4 oz unsalted butter, softened 4 oz cream cheese, softened 2 c powdered sugar 1 tsp vanilla extract Cream butter, vanilla and cream cheese on low speed, add the powdered sugar a cup at a time until smooth and creamy.

Lemon Glaze

1 egg white, beaten 1 tablespoon lemon juice 1/2 teaspoon lemon zest 1 1/2 cups sifted confectioners’ sugar In a small bowl, stir together the egg white, lemon juice and lemon zest. Mix in the confectioners’ sugar until smooth. Brush over cookies.
