Roasted Salmon

4 salmon filets 2 tbl honey 1/4 c cider vinegar 2 tsp chopped fresh thyme 1 lemon sliced thin 2 tbl olive oil Sea salt Fresh ground pepper Aluminum foil Mix together honey, vinegar, thyme, salt and pepper. Pour over salmon and marinate 4 hours. 

Tuna Pasta Salad

1 box or bag of dried pasta ( I prefer rotinni, shells or bowties, since they seem to hold more taste) 1 large can Albacore tuna in water, drained and crumbled 1 c diced celery 1 c diced carrots 1/2 c diced green onions 3 

Halibut Tacos

8 battered halibut filets 1 pkg corn tortillas 16 oz black refried beans 2 boxes spanish rice Cojita cheese Place fish filets in a baking dish and bake till golden brown, approx 25 minutes, turning over once during baking. Make rice according to package directions
