1-2 English cucumbers, peeled
12 oz seasoned rice vinegar
1/4 red onion, minced
1 tsp ground ginger
1 tsp white pepper
In a tight sealing container combine vinegar, onion, ginger and pepper. Shake to blend.
Cut cucumbers in slices and place in container. Refrigerate for at least 1 hour before serving.
