Cajun Beans and Bacon

1 pkg dry red beans
1 pkg thick pepper bacon
3 16oz cans crushed tomatoes
1 large sweet yellow onion
2 med cloves garlic
1/2 cup brown sugar
1/2 c cider vinegar
2 tsp sweet hot mustard
1 tsp tobassco
1 tbl chile powder
1 tsp black pepper
1 tsp hot hungarian paprika
2 tsp thyme

In a large (6qt) crock pot place dry beans with enough water to cover, cook till tender. Approx 6 hours on low. Drain and place back in pot.

Cut bacon into small pieces and cook until crisp, drain on paper towel. Crumble and add to beans.

Dice onion and garlic, add tomatoes, brown sugar, vinegar and the rest of the seasonings to beans.

Let cook on low for 3-4 hours. Serve with cornbread.
