2 lb smoked pork shanks
1 qt water
1 onion, diced
1 qt sauerkraut with juice
1/4 cup sugar
1/4 cup cream
1 egg
1 tbsp flour
3/4 cup milk
1 pkg bacon (optional)
Cook meat in slow cooker till tender , Saute onion till golden brown. Add onion, sauerkraut and juice and sugar. Beat egg, add flour, milk and cream. Add to soup and cook till thickened.
Cook bacon till crisp and set aside to drain. While soup is cooking
Serve with potato dumplings and crispy bacon crumbles on top and a frosty stein of your favorite ale or beer
