Roasted White and Sweet Potatoes

1 large sweet potato
6 -8 russet potatoes
1/4c olive oil
4 sprigs of fresh or 2 tsp of dried rosemary
1/2 tsp sea salt
1/4 tsp pepper

Peel and cut into bite size pieces, all the potatoes. Place in a casserole pan and pour on olive oil and toss to coat evenly. sprinkle on rosemary, salt and pepper and toss again to season evenly.

Bake covered in 350 oven for 45 minutes or until a fork slides easily into the potatoes.
