Onion Soup with Cheese Croutons

2Tbsp butter
3 cups sliced sweet yellow onions
1/4 tsp minced garlic
8 cups beef stock
1tsp fresh chopped thyme
2 bay leaves
1/4 cup white wine

Cheese Croutons

6 slices French bread
1Tbsp butter, melted
3Tbsp grated parmesan cheese
3Tbsp shredded Swiss cheese

In a 3 quart saucepan melt butter, stir in onions and garlic and sauté till golden brown. Stir in beef stock, thyme and bay leaves. Bring to a boil; reduce heat and simmer for 30 minutes until flavors are blended. Remove bay leaves. Stir in white wine just before serving. Heat oven to 400 degrees. Brush both sides of bread with melted butter. Sprinkle tops with the cheeses and bake until toasted and cheese is melted. Spoon soup into individual bowls and top with croutons.
