6 boneless, skinless chicken breasts
2-3 cloves garlic, minced
1 med sweet yellow Onion chopped
6 c Water
2 T better than chicken bouillon paste or 5 low sodium cubes
1 can chopped green chilies
1 tsp cumin
1 tsp Oregano
1 tsp Chile powder
1/2 tsp white pepper
2 can hominy yellow or white
In a 6 qt crock pot, place chicken, garlic, onions, water, bullion, spices and let cook low for 6 hours. Remove chicken and set aside to cool. Add hominy and cooled shredded chicken and continue to cook on low for 1 hour
Garnish with:
Chips, Avocado slices, Radish slices, Cabbage (shredded), Queso Fresco and Cojita cheese, Lime slices, Tomatoes (chopped)
