place in colander in a bowl
10 celery (diced)
5 carrots (diced)
2 lg red pepper (diced)
1/2 c califlower (diced)
2 T Kosher Salt
cover with salt to brine them in the frig to pull out excess water. 6hours or overnight
Once veggies have drained excess water, rinse them to remove salt. Drain and pack in jars
Add
1 c sliced green olives
8 pickled jalapeno slices
1 cloves garlic diced
to jars with veggies.
Mix
4c white vinegar
4 c water
1/2 tsp oregano
1/2 tsp coriander seed
1/4 tsp mustard seeds
1/4 tsp fennel
1/4 tsp peppercorns
1/4 tsp pepper flakes
1 bay leaf
pour evenly into the jars, leaving 1/2 inch, add 1T olive oil to each jar. Put on lid and refrigerate.
